I made Garlic Chicken Gravy today on my daughter’s special demand, and it turned out absolutely amazing! She also wanted a few fluffy, hot lucis to go with it, so I whipped those up too. This recipe uses very few ingredients: the real secret lies in how you bring out and utilize the garlic flavor. I used 700g of boneless chicken today, though I personally love making it with bone-in chicken too. The entire dish was cooked in mustard oil. For the paste : I used 1 large onion, a 2-inch piece of ginger, and 3 large whole garlic bulbs (you can also grate the garlic instead of pasting it). I also added 2 large green chilies and 2 tomatoes, finely chopped (you can puree them if you prefer). And Tomato catch-up. For the tempering (foron): I used cinnamon, cloves, black peppercorns, and cardamom. Quick method: I fried the chicken first and took it out. In the same oil, I added the whole spices, sautéed the pastes and chopped ingredients thoroughly, and then stirred in some well-beaten yogurt. Once the gravy came together, I added the fried chicken back in, let it simmer for a bit, and voila! Delicious Garlic Chicken Gravy was ready to serve!"
