Homemade Yogurt, Thick Kaymak, and Soft Bazlama: 3 Recipes from 1 Pot of Milk
Ever wondered how to make the most out of a single batch of fresh milk? In today’s episode, I’m taking 5 liters of raw milk and transforming it into a complete breakfast spread. First, I’ll show you the secret to collecting thick, velvety Kaymak (clotted cream) by resting the milk overnight. Then, we use the remaining milk to make the thickest Instant Pot Yogurt you've ever seen—no additives, just pure science and tradition. Milk & Kaymak To get that thick, professional-grade cream, patience is your best friend. Boiling: Start with 5 liters of raw, full-fat milk. Bring it to a boil in a wide pot. Once it starts to rise, simmer for about 5-10 minutes. The Cold Rest: Let the milk cool to room temperature, then place it in the fridge overnight. This 12-hour rest allows the fat to rise and solidify into Kaymak. Collecting: The next morning, gently cut the edges with a knife, fold the cream layer, and set it aside on a plate. Finally, I’m using that fresh yogurt to make No-Yeast Bazlama. These flatbreads are incredibly soft, quick to make, and the perfect vessel for our homemade kaymak and a generous drizzle of honey. The Perfect Thick Yogurt (Instant Pot) Now we use the remaining milk (approx. 3 liters) to make yogurt with zero guesswork. Inoculation: Ensure the milk is lukewarm (around 43°C / 110°F). Whisk in 2-3 tablespoons of your yogurt starter (yogurt maya). Fermentation: Pour the mixture into the Instant Pot and select the Yogurt Setting for 8 hours. The Setting Phase: Once the 8 hours are up, do not stir. Place the pot directly into the fridge for another 12 hours (or overnight). This is the secret to a firm, spoonable texture! Quick Yogurt Bazlama (No-Yeast) The ultimate use for your fresh yogurt. These are soft, pillowy, and instant. Ingredients: 1 cup of your fresh homemade yogurt 3 - 3.5 cups of Flour (added gradually) 1 packet (10g) Baking Powder 1 tsp Salt Optional: Shredded Kashar cheese for the center.
