Shinden Suita Japanese Natural Stone on Moritaka Gyuto

This video is the last in a sequence of Japanese Natural stones demonstrating the final finish of a Moritaka gyuto. This is a layered or Suita stone. I begin by demonstrating porosity. The stone is quite hard and non-porous holding a bead of water on the stone for some time. The stone quickly abrades the knife, demonstrated y the rapid production of easily visible metal swarf of the stone. It is very fine swarf. The stone is not a very muddy stone at all. The final edge is improved over the previous edge generated by the Yaginoshima Asagi.
