New Mexico Red Chile from Powder
Ingredients : 1/4 to 1/3 cup dried red chile powder 2 tablespoons oil, we used canola and butter today 2 tablespoons tablespoon all purpose flour Garlic powder/salt/oregano to personal taste (1/2 teaspoon is a great start) 6 cups vegetable or chicken stock Heat oil and add flour to make a light brown roux, move to side and start to toast spices to bloom flavor, then incorporate into the roux. Cook for a few minutes and then slowly add liquid to desired thickness. Cook at low boil/simmer for 25–30 minutes. It will thicken as it cooks. Delicious to use for enchiladas, burritos and huevos rancheros.
