It is the standard fuel, but water heating is something that can be very easily accomplished with a passive solar system. It's also perfect for a passive solar system because though it's not sunny all the time, water can be stored in insulated tanks and maintain its temperature for a long time, so the intermittent nature of solar heating can work fine for a water heating system. The water tank is like the battery storing the sun's energy. Solar hot water systems have changed a lot over the years and there are other options today for off grid water heating. Different from the older, far less efficient water heating solar panels of the 70s and 80s, evacuated tubes are far quicker, effective, and more efficient.
