FDT LANDES : 3ème PARTIE, GASCONNADES ET RÉGALADE AVEC LOU JAN DE BUROS ET LE CHEF MICHEL CARRÈRE

My journey through the Landes region of Gascony continues under the best of auspices, as Lou Jan de Buros and Jean Barrère and I meet up with Gascon chef Michel Carrère at his birthplace near Saint-Justin. The tone is set... in Gascon! The former chef of the Michelin-starred restaurant La Chamade in Bordeaux and the Hôtel de France in Saint-Justin welcomes us with his wife Brigitte, who embodies their own character: simplicity, sincerity... and a willingness to share kind words and delicious local products. It's a truly special moment with Jean, Michel, and Brigitte, Michel's discreet wife who always looks after everyone with kindness and has always been by the chef's side in his gastronomic and literary endeavors. My cameraman, Simon, was also thoroughly entertained and had a wonderful time! Why wonderful? Because while enjoying some Gascon-style dishes, we had the chance to gather some mousserons (a type of mushroom) to eat right away! Then, aperitifs featuring the delicious bull sausage and hare pâté skillfully prepared by Michel! We could have stopped there, but we simply had to try his homemade black pudding and mashed potatoes... also homemade, of course. "We're cooks for life, and it's the best job in the world," as Michel proudly says, and it shows in the food, in his warm Gascon hospitality. To finish, Armagnac and white wine perfectly complemented a succulent Landes-style Armagnac pastis, bringing this Gascon lunch to a close—a lunch of pure enjoyment, and proud of it! "Many thanks again," Brigitte and Michel, for your warm, generous, and unpretentious welcome... as you so aptly put it, Michel, "as long as we can live like this, the world isn't doomed!"...
