Meanwhile, halve the leeks lengthwise and wash them. Then cut them into thick rings. As soon as the liquid from the ground beef has evaporated and it starts to brown, add the leeks. Season generously with salt and pepper, mix the leeks and ground beef together, and sauté for about 5 minutes. Once the leeks have softened, deglaze with white wine and let it reduce. Then add 500 ml of water, bouillon powder, and vegetable seasoning, stir, and let it simmer for another 5 minutes. Meanwhile, trim the rind off the Camembert and then roughly dice the cheese. Add the processed cheese, diced Camembert, crème fraîche, and cream to the soup. Stir everything together over low heat and melt the cheese for about 4 minutes. Meanwhile, combine the butter and flour and work it into a beurre manié. Add a little of the beurre manié to the soup to thicken it. Simmer, stirring constantly, for about 1 minute until the beurre manié dissolves.
