The Ministry of Agriculture, Food Sovereignty, and Forestry has recognized the exceptional spread of the blue crab in the Veneto and Emilia-Romagna regions, publishing two decrees in the Official Gazette. The exceptional nature of the event, which began to manifest itself in June 2023, is evidenced by the extensive damage that the spread of this invasive species, native to the Atlantic, has caused to fisheries, aquaculture, and business facilities. For years now, however, there are those who have decided to derive something beneficial from the blue crab and other invasive species, offering environmental cuisine based on optimizing available resources and enhancing the local area. For this reason, we traveled to Mazzorbo, an island in the Veneto lagoon west of Burano, where we met Chiara Pavan, chef of the Venissa restaurant, which has been awarded a Michelin Green Star for its environmental cuisine. At Venissa, Chiara Pavan has been choosing to forgo meat-based options for four years now, respecting seasonal produce as much as possible, and always cooking blue crab, which is abundant in the lagoon.
