Add bay leaves, cinnamon, cloves, and cardamoms. Sauté until fragrant. Add sliced onions and cook until golden brown. Mix in the ginger-garlic paste and cook for 2 minutes. Add chopped tomatoes, turmeric, red chilli powder, coriander powder, cumin powder, and salt. Cook until the oil separates. Add the curd and mix well. Add the mutton pieces and cook on high heat for 8–10 minutes until they are well coated with the masala. Pour in enough water to make a rich gravy. Pressure cook for 5–6 whistles (or simmer in a pot until the mutton is tender). Sprinkle garam masala and cook for another 2 minutes. Garnish with fresh coriander leaves and serve hot with steamed rice, jeera rice, naan, roti, or paratha.
