Dubai Chewy Marshmallow Cookies. . Ingredients Pistachio Filling • 100g Kataifi dough • 25g Butter • 100g Pistachio Butter • 30g White Chocolate Couverture • 1/4 Tsp Salt Chewy Cookies • 150g Marshmallow • 30g Butter • 16g Cocoa Powder • 8g Milk Powder Coating • Cocoa Powder as needed . Instructions 1. Melt the butter in a pan. Once melted completely, add in the Kataifi dough. Stir and toast it until turning golden brown. Take it off the heat. 2. Melt the white chocolate. Add in the pistachio butter into the melted white chocolate. Stir until completely combine. 3. Pour in the toasted Kataifi dough. Stir until coated completely. 4. Scoop the dough and shape it into a balls (about 25g). Cover it and let it rest in the freezer for 1 hours. 5. Melt the butter. Then add in the marshmallow. Heat it and stir until about 80% melted. Turn off the heat. 6. Sift in the cocoa powder and milk powder. Stir and mix until completely combine. 7. Place it on lightly oil surface. Let it cool down to room temperature. Divide it into 10 equal portion (about 20g). 8. Take out the Kataifi dough from the freezer. 9. Roll out the marshmallow and place the Kataifi ball in the center. Wrap it until it cover the Kataifi ball completely. 10. Place it on tray dusted with cocoa powder. Repeat until finish. 11. Sprinkle and roll the balls with cocoa powder until it covered completely. Place it on paper cup.
