Phi Stang takes us into the garden to explore a native plant of the Thai-Vietnamese community, the "Paan leaf," in Nong Yat Subdistrict, Mueang Nakhon Phanom District, Nakhon Phanom Province. He'll also join us in the kitchen to prepare a famous local dessert, "Paan leaf dessert," or Vietnamese Kalamae, and "Fresh Noodles with Paan Leaf Vietnamese Noodles in Vietnamese Noodles." Kids' Kitchen Tips "Paan leaf," or the "Paan rami" plant, is a perennial herbaceous plant with silvery hairy leaves, which is why it's sometimes called "white rami" (white paan). The villagers of Ban Na Jok, a Thai-Vietnamese community, have been using the leaves for their utilization since their ancestors. They dry and boil the leaves, then use them as ingredients in the "Paan leaf dessert." Paan leaves are known for their vibrant color, giving them a dark green color when mixed with flour, and a beautiful, shiny black color when steamed. They also provide a chewy texture.
