ULTAY PULTAY: Ingredients: Gram flour 1 cup Ginger & garlic paste 1 tbsp Salt as required Red chili powder 1 tbsp Chopped green coriander 1 tbsp Chopped green chili 1 tbsp Water as required Oil for frying Ingredients for gravy: Oil ¼ cup Ginger & garlic paste 1 tbsp Onion paste ¼ cup Tomato puree ½ cup Salt as required Red chili powder 1 tbsp Coriander powder 1 tbsp Garam masala powder 1 tsp Turmeric ½ tsp chopped Green coriander 1 tbsp small green chilies 3 - 4 water as required METHOD: In a bowl add all the batter ingredients and make the batter .after his in a frying pan add some oil and heat it .then add gram flour batter pour then cook on low heat .after this fold and cook .now cut the three pieces and set a side .then in a woke add oil heat then add the ginger garlic paste and sauté it .now add all the gravy ingredients and cook it .when oil come on surface then add the green coriander and green chili and further cook for 2 to 3 minutes. Finally add ultay and pultay and serve it. FRIED CHICKEN MANDVI KABAB: Ingredients: Chicken mince 500 grams Bread slice 1 slice Ginger & garlic paste 1 tbsp Green chili paste 1 tbsp Red chili powder 1 tsp Salt as required White pepper 1 tsp Garam masala powder 1 tsp Cumin powder 1 tsp Peanut roasted ¼ cup Green coriander chopped 2 tbsp Oil for frying METHOD: In a bowl add chicken except peanut and green coriander add all the ingredients mix. then add in a chopper and grind it. now in this mixture add green coriander and peanuts then make medium size kabab and then heat the oil and fry the kabab.
