Yeast Sponge: 7g dry instant yeast, 1 tbsp rice flour, 1 tbsp sugar of your choice, 3 tbsp warm or room temperature water. Mix, cover, and set aside. Flaxseed Gel: 14g flaxseed flour, 3 tbsp water. Mix well and set aside. Dough: 400g Mix2 Chef GlutenFree, 20g sugar of your choice, 1 tsp salt. Mix and add: Yeast sponge, 2 tbsp apple cider vinegar, Flaxseed gel. Continue beating by hand or use a stand mixer. Add plant-based milk gradually (I used cashew milk). In total, I used 400ml of plant-based milk. 50ml olive oil. Beat well to incorporate everything. Cover and let the dough ferment for about 1 hour and 30 minutes to 2 hours. Prepare a 28 x 22 cm baking pan. Tip: Line with parchment paper and grease with... Olive oil After fermentation, transfer the dough to the counter (I used a silicone mat) brush with a little olive oil place a little olive oil or melted butter on the dough flatten it with your hands add part of the banana filling, spread well Fold the dough and seal the seam Transfer the dough to the pan and again flatten the dough to the size of the pan Place the remaining banana filling and spread well With your fingertips, make holes in the dough Cover and let it ferment for another 25-30 minutes Turn on the oven to preheat to 230ºC (450ºF) After this second fermentation Bake in the preheated oven for 15-20 minutes Tip: let it brown Remove from the oven and let it cool slightly. Unmold and consume while still warm You can sprinkle a little cinnamon on top (optional). Suggestion: you can make it with apple, red fruit jam or as you prefer. .......
