Kacau sehingga pecah minyak. 3 Masukkan sedikit air dan biarkan ia mendidih. Bila dah mendidih, masukkan kesemua buah mangga.Gaul rata dan biarkan ia reneh. 4 Kemudian masukkan kerisik dan gula merah secukupnya. 5 Lepastu masukkan santan dan gaul sebati. 6 Masak lagi sehingga kuah pajeri menjadi pekat. kemudian adjust rasa dan tutup api. Sedia untuk dihidang. NASI MINYAK Masa penyediaan : 15 minit Masa memasak : 40 minit Hidangan :5-6 pax Resipi Nasi Minyak Bahan tumis: 2 sudu besar minyak 1 sudu besar minyak sapi vegan 1 batang kayu manis 1 bunga lawang 4 biji cengkih 4 biji buah pelage 1 helai daun pandan (potong kecil) 1 batang serai(diketuk) 4 biji bawang merah(dihiris) 4 ulas bawang putih(ditumbuk) 4 hirisan halia(ditumbuk) Bahan-bahan: 2 cawan beras basmathi(dibilas) 2 ½ cawan air ½ cawan susu plant based/santan cair Perasa cendawan dan garam secukupnya Pewarna (pilihan) Cara memasak : 1 Masukkan minyak dan minyak sapi vegan. Biarkan ia panas. 2 Masukkan kayu manis, bunga lawang, bunga cengkih, buah pelaga. Kacau rata. 3 Kemudian masukkan daun pandan dan serai. Kacau sehingga naik bau. 4 Kemudian masukkan bawang merah, bawang putih,halia dan kacau sehingga naik bau. 5 Masukkan beras basmathi yang telah basuh dan kacau rata. 6 Pindahkan ke dalam periuk nasi. Kemudian, masukkan perasa cendawan, garam secukupnya, air,susu plant based/santan cair dan pewarna makanan. Kacau rata. Tutup dan biarkan ia masak. 7 Masa waktu nasi masak. Anda perlu kacau nasi sekali sekala. Lepas nasi masak, lalu angkat dan dan sedia untuk dihidang. MANGO PAJERI Preparation time: 30 minutes Cooking time: 40 minutes Servings: 7-8 pax Mango Pajeri Recipe Ground ingredients: 8-10 onions 5 cloves garlic 2 inches ginger Water as needed Stir-fry ingredients: Oil (for frying) 4 dry spices 1 tbsp chili powder 2 tbsp curry spice A little bit salt A little water Other ingredients: 3 mango(peeled and cut into small pieces) 5 young mango (remove seed, cut wedges) Coconut milk as needed Palm sugar as needed Salt as needed ½ coconut (Kerisik) *dry roasted coconut until brown. Let it cool and grind/mash fine) Cooking method : 1 Heat the oil then stir-fry the 4 dry spices and the ground ingredients until fragrant. 2 Add chili powder and curry powder. Stir until the oil breaks. 3 Add some water and let it boil. When it boils, add all the mangoes. Mix well and let it simmer. 4 Then add enough kerisik and brown sugar. 5 Then add coconut milk and mix well. 6 Cook again until the pajeri sauce becomes thick. Then adjust the taste and turn off the heat. Ready to be served. NASI MINYAK Preparation time: 15 minutes Cooking time: 40 minutes Servings: 5-6 pax Nasi Minyak Recipe Stir-fry ingredients: 2 tbsp oil 1 tbsp vegan ghee 1 cinnamon stick 1 star anise 4 cloves 4 pcs cardamom 1 pandan leaves (cut into small pieces) 1 stick lemongrass (tap) 4 onions (sliced) 4 cloves garlic (pounded) 4 slices ginger (pounded) Ingredients: 2 cups basmati rice (rinsed) 2 ½ cups water ½ cup plant-based milk/liquid coconut milk Mushroom seasoning and salt to taste Colouring (optional) Cooking method: 1 Add oil and vegan ghee. Let it heat up. 2 Add cinnamon, star anise, cloves, cardamom. Stir well. 3 Then add pandan leaves and lemongrass. Stir until fragrant. 4 Then add sliced onion, garlic, ginger and stir until aromatic. 5 Add the washed basmati rice and stir well. 6 Transfer to a rice cooker. Then, add mushroom seasoning, enough salt, water, plant-based milk/liquid coconut milk and food colouring. Stir well. Cover and let it cook. 7 The time when the rice is cooked. You need to stir the rice once in a while. After the rice is cooked, take it out and it's ready to serve.
