Simple is best

Simple food always seems to taste the best. 🏝️🐟 Out here on a small island off the coast of Mozambique, we don't have fancy ingredients or a fully stocked kitchen. Just a freshly caught Cuta (Spanish mackerel), a few pantry staples, a cast-iron pot over the fire, and good company. This recipe is incredibly simple and works with almost any firm white fish. 🛒 Shopping list: 🐟 Any white fish, cut into bite-sized chunks 🍞 Breadcrumbs 🥚 Eggs 🧈 Butter 🧂 Salt & black pepper 🌶️ Turmeric 🥘 Cast-iron pot Some of our favourite Greenfish options: • Kingklip • Yellowtail • Kob • Cape Salmon • Monkfish Method: 1️⃣ Cut the fish into bite-sized chunks. Don't worry about rough edges—they create extra crispy bits once cooked. 2️⃣ Dip each piece into an egg wash. 3️⃣ Coat in breadcrumbs seasoned with salt, black pepper and turmeric. Feel free to add any of your favourite herbs or spices. 4️⃣ Melt butter in a hot cast-iron pot over the fire and shallow fry for 5–6 minutes, turning until golden brown and crispy. 5️⃣ Serve hot with a generous dollop of mayonnaise and enjoy.
