Soak gelatin in cold water for 10 minutes to soften. Then squeeze out the excess water. 2. Scrape the seeds from a vanilla bean pod. 3. In a saucepan, heat heavy cream, sugar, and vanilla until the sugar dissolves. Remove from heat and stir in the gelatin until incorporated. Strain the cream mixture. 4. Add yogurt and limoncello to the cream mixture and let cool slightly. 5. Pour the mixture into ramekins or molds and refrigerate for at least 4 hours to set. 6. To serve, either keep in the ramekins or invert onto plates. Garnish with lemon slices and mint leaves. 7. For the best texture, remove the panna cotta from the fridge 10–15 minutes before serving so it can soften slightly.
