عصارخانه جماله Jamaale Essence House در دوران قدیم، سوخت اصلی چراغ برای نورافشانی، روغن‌های گیاهی و حیوانی بود. عصارخانه‌ها کارخانه‌های مجهزی برای تولید روغن گیاهی بودند. عباس بهشتیان درباره عصارخانه نوشته است: «فزونی احتیاجات موجب پیدایش صنعت عصارخانه‌ها، یا بهتر بگوییم کارخانه‌های مهم روغن‌گیری شده که به وجود آوردن چنین دستگاه جالبی در آن روزگاران واقعاً قابل تحسین است. این نوع کارخانه‌های بزرگ ابتدا منحصراً در شهر اصفهان به وجود آمده و اکنون تنها در این شهر تاریخی چهار کارگاه عصارى از این صنعت مهم ملی باقی مانده است. در صورتی‌که تا نزدیک به هشتاد سال پیش، هفده عصارخانه در شهر اصفهان به همین کیفیت، بلکه هر یک کامل‌تر برپا و دایر بوده است. در دوره صفوی از روغن‌های حیوانی و حتی نفت به میزان بسیار کم برای روشنایی استفاده می‌شده، اما به نظر می‌رسد هزینه کمتر استفاده از روغن گیاهی، باعث مصرف بیشتر این نوع روغن و گسترش عصارخانه‌ها بوده است. ____________________________________ Jamaale Essence House In ancient times, the primary fuel used for lighting was vegetable and animal oils. Oil presses, known as Essence Houses (Asarkhaneh), were traditional workshops equipped to extract vegetable oils. According to historian Abbas Beheshtian: “The growing needs of society led to the development of oil presses, or rather, important oil-extraction workshops. Constructing such sophisticated facilities in those days was truly remarkable. These large workshops first appeared exclusively in Isfahan. Today, only four historic oil presses remain in the city as valuable examples of this national craft. Less than eighty years ago, however, there were seventeen operating oil presses throughout Isfahan, each as complete—or even more advanced—than the ones that survive today. During the Safavid era, animal oils and even small amounts of petroleum were occasionally used for lighting.
