Juicy Cornish Hens with Cornbread Stuffing and Wild Rice/ Mattie's Kitchen

Mattie's Kitchen 👍🏿 ✨ Ingredients: Step 1 – Cook Cornish Hens Ingredients: • 2 Cornish hens (1½ lbs each) • 2 tbsp olive oil or butter • 1 tbsp poultry seasoning • 1 tbsp rotisserie chicken seasoning • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp red pepper flakes (optional) • 1 tsp salt • ½ tsp black pepper Instructions: 1. Pat hens dry, rub with butter or olive oil. 2. Season inside and out with all spices. 3. Roast in deep dish at 400°F for 40 minutes covered with foil, then 25–35 minutes uncovered until golden and internal temp is 165°F. 4. Reserve 1 cup pan juices for the cornbread stuffing or gravy. ⸻ Step 2 – Honey Cornbread Ingredients: • 1 cup cornmeal • 1 cup flour • ⅓ cup sugar • 1 tbsp baking powder • 1 tsp salt • 1 cup milk • 2 eggs • ¼ cup melted butter • ¼ cup honey Instructions: 1. Mix dry ingredients; whisk wet ingredients separately. 2. Combine, stir until blended. 3. Bake at 400°F for 20–25 minutes. Cool, crumble for stuffing. ⸻ Step 3 – Cornbread Stuffing (side dish) Ingredients: • 4 cups crumbled honey cornbread • 3 tbsp butter (or oil) • 1 onion, diced • 2 celery stalks, diced • 1 green bell pepper, diced • 2 garlic cloves, minced (optional) • 1–2 tsp poultry seasoning • ½ tsp black pepper • Salt if needed • ½–1 cup Cornish hen pan juices or broth Instructions: 1. Microwave onion, celery, bell pepper, garlic, and butter 6–8 minutes, stirring halfway until softened. 2. Stir in seasonings, then add to crumbled cornbread. 3. Moisten with ½–1 cup pan juices. Bake side dish if desired for a golden top. ⸻ Step 4 – Rice • Cook 1 cup rice (or desired amount) separately. Season lightly with salt, butter, or parsley. ⸻ Step 5 – Assemble Stuffed Hens 1. Combine the cooked rice and cornbread stuffing in a bowl. 2. Spoon the mixture into the cavity of each cooked Cornish hen (you’re essentially “stuffing” them after cooking). 3.
