How to make Reibekuchen - a.k.a. Kartoffelpuffer

One of my favorite German street and Christmas market food; these potato pancakes are the best potato treat I've ever had in German Christmas markets and it's the perfect, crispy snack on a cold winter day. They are mostly served with apple sauce, but my favorite dip for this street food is herb quark sauce which perfectly balances the oily flavor of these pancakes.
