Preserve & Cook with GREEN OLIVES

Preserving green olives in brine (salt water) is an ancient know how that might seem complicated to many at first glance. In this video, I wanted to show you how to preserve green olives at home and store them for a lot of years with Grandma’s old recipe. Is actually not that complicated, just needs a little patience. After preserving them, there are a lot of different ways to use them. The most famous way in Cyprus is the Cypriot marinated “cracked” olives (elies tsakistes). I’ve included another way to marinate green olives, with aromatic herbs, orange peel, chili, and vinegar. Very tasty! I also prepared a green olive paste (tapenade) that I used to make a special pitta recipe that I’ve created especially for the video (messing up with a traditional recipe). Hope you enjoy it!
