These small fritters, typical of the Caribbean, will brighten up this rather gloomy autumn day... *** Recipe Details *** Ingredients: 400g salted cod 150g flour 50g chili pepper 3 garlic cloves 80g chopped chives ½ onion 1 teaspoon baking powder 1 teaspoon pepper Preparation: 1/ Desalt the cod by soaking it in boiling water for 20 minutes, then flake it as finely as possible. 2/ Halve the chili peppers and remove the seeds from the flesh. 3/ Chop the chili peppers, parsley, chives, and garlic. 4/ Mix all the ingredients together and add the flour, then 1 to 2 teaspoons of baking powder. 5/ Once the dough is ready, add water in two batches, making a small hole in the dough, then let the dough rest in the refrigerator for a few hours. 6/ Form the dough into small balls and dip them in boiling oil for 2 to 3 minutes to form the accras. 7/ To accompany, prepare a sauce with onions, parsley, chives, salt, pepper, and thyme.
