Cassava Suman Regular Suman Cassava Ingredients: 2 cups cassava, grated & squeezed 3/4 cup brown sugar(more or less) 1/2 cup coconut milk(gata) 1/3 cup coconut/buko meat, strips 1/4 cup powdered milk, optional 1 tsp vanilla essence, optional Ube Suman Cassava ingredients: 2 cups cassava, grated & squeezed 1/2 cup coconut milk, gata 1/3 cup brown sugar(more if preferred) 5 tbsp ube halaya(more if preferred) 1/4 cup coconut/buko meat, strips(optional) 1 tsp violet food color, optional Procedure: 1) Squeezed out the juice from the grated cassava 2) Regular Suman Cassava: Combine cassava, brown sugar, coconut milk, coconut/buko meat, powdered milk and vanilla essence 3) Ube Suman Cassava: Combine cassava, coconut milk, brown sugar, ube halaya, coconut/buko meat and violet food color 4) Optional: add fillings(ube halaya and yema filling) 5) Spoon 2 tbsp of mixture onto a banana leaf and roll into a log. Fold banana leaf over the mixture and roll it tightly.
