Italian Peppers and Eggs Sandwich - Depression Era Recipe

My father was Italian and this was a breakfast that he enjoyed. It was very economical because his family grew peppers in their garden, raised their own chickens for eggs, and baked their own bread. I like to season it with an Italian seasoning herb blend that makes it taste like it has sausage in it but it doesn't. It's a delicious sandwich that we enjoy. #cooking, #recipe, #greatdepression;
