Pâte de coing

Today I'm sharing my quince paste recipe. Autumn is here with its seasonal fruits, and quince is certainly one of them. We all remember its intoxicating aroma when we walk into the kitchen and find a basket of quinces on the table. Personally, it brings back memories of my grandparents making quince paste for the winter, especially for Christmas dinner. In Provence, quince paste often graces the Christmas Eve table as one of the thirteen traditional desserts. Quince paste is made like jam: it's poured into molds and left to dry until firm. When it's time to eat it, it's coated in sugar to prevent it from sticking to your fingers. The quince is truly a unique fruit because it's inedible raw. However, when cooked, it transforms, becoming sweet and very flavorful. It's sweet but with a touch of acidity, making it a perfect match for both sweet and savory dishes. Quince, once considered old-fashioned, is making a strong comeback because the tree is hardy and undemanding. Consequently, it requires minimal treatment during cultivation and is not very thirsty, unlike other fruits such as apples. Well, as you've probably noticed, I'm really keen to introduce you to, or perhaps reintroduce you to, quince paste, which isn't actually that complicated to make.
