Chimp achim is a traditional lunch box recipe from Arunachal Pradesh where the farmers would take it to the fields or while travelling. The dish is simple and prepared with chicken, lai xaak, bamboo shoots with condiments; then they are wrapped in a special leaf called Akum, which lends a beautiful flavour along with rice. The lunch is delicious and absolutely healthy. It's hard to wait for lunch when you know what is waiting for you.
