Zereshk Polo (Persian Barberry Pilaf) The zereshk, also known as barberries, are a common feature in Persian rice dishes. This recipe comprises of long grain rice that is cooked and topped with a sauce of rich, colorful flavors from the caramelized onions, barberries, sliced almonds, orange peel, and saffron. INGREDIENTS: 2 cups long grain rice (preferably basmati) 5 cups water ⅓ cup regular or vegan butter 1 large onion, finely sliced ½ cup sliced almonds 2 tablespoons sugar ¼ teaspoon salt ⅓ cup zereshk (barberries) 1 tablespoon orange peel, pith removed and cut in strips Pinch of saffron, crushed and soaked in 1 tablespoon water DIRECTIONS: 1. Wash rice and leave to soak in hot water for 30 minutes. 2. Take a pinch of saffron and crush in a mortar and pestle. Add saffron powder to one tablespoon of water and leave to soak. 3. Heat a large frying pan. Add butter. When melted, add in the onion slices. Cook on medium-low heat for approximately 15 minutes or until the onion becomes golden brown and slightly caramelized. 4. Add chopped almonds, sugar, and salt. Continue to cook for a further 5 minutes. 5. Add barberries, orange peel, and the saffron water. Stir and continue to cook for 5 more minutes. Remove from the heat. 6. Transfer the cooked rice into a large serving dish and top with the zereshk mixture.
