I'll show you how to conjure up this perfect dish step by step, which is great for lunch, dinner, or simply as a sweet snack. Ingredients: For the dough: 30 g fresh yeast 1 tbsp sugar (for the starter) 250 ml milk 0.5 kg wheat flour (type 650 or 500) 2 tbsp sugar (for the dough) 0.5 tsp salt 2 eggs 30 g melted, lukewarm butter Flour for dusting For the strawberry sauce: Fresh strawberries (quantity as desired, depending on preferred thickness and amount of sauce) 2 tbsp sugar (or more/less, as desired) 2 heaped tbsp thick 18% cream 2 tbsp natural yogurt (I recommend thick, e.g., Greek type) Fresh strawberry for decoration Preparation: Dough for the dumplings: Prepare the starter: In a bowl, mix fresh yeast with 1 tbsp sugar and 250 ml milk. Add one large tablespoon of flour (taken from the 0.5 kg). Mix thoroughly, cover with a cloth, and set aside in a warm place for 20 minutes for the starter to rise. Knead the dough: Add 2 tbsp sugar, 0.5 tsp salt, 2 eggs, and the remaining flour (about half a kilogram) to the risen starter. Knead the dough until it easily comes away from your hand. Add butter: Add 30 g of melted, lukewarm butter to the kneaded dough and knead again until the dough is smooth and elastic, not sticking to your hands or the bowl. Dough rising: Spread the dough evenly on the bottom of the bowl, dust lightly with flour, cover with a cloth, and set aside in a warm place for about an hour until it doubles in volume. Forming the dumplings: Once the dough has risen beautifully, punch out the air and lightly work it. You can make dumplings: With a strawberry inside: Take a piece of dough, flatten it, place a medium-sized strawberry in the center, and carefully seal the dough to form a ball. Place it seam-side down on a floured board. Hollow inside: Simply form balls from pieces of dough. Second rising: Cover the formed dumplings with a cloth and leave for about 20 minutes. Tip: Form the dumplings in batches (e.g., 3-6 pieces), as they tend to over-rise if all are prepared at once. Form subsequent batches as the previous ones are cooking. Steaming: Prepare the pot: Boil water in a steamer pot. If you don't have a special steamer, you can use a regular pot: place a gauze or clean cloth over the top, tie it with string or an elastic band, and then place another fitting, inverted pot or bowl on top to serve as a lid. Cook the dumplings: Once the water is boiling, gently place the dumplings on the steamer. You can lightly grease the surface with oil to prevent the dough from sticking. Cook on medium heat (e.g., setting five) for 12 minutes. Remember to keep an eye on the cooking time. Strawberry Sauce: Prepare the strawberries: Wash, hull, and cut the strawberries into smaller pieces (especially larger fruits). Mash the strawberries: Mash the strawberries with a potato masher or a fork. If you prefer a smooth sauce, you can blend them. Add ingredients: To the mashed strawberries, add 2 tbsp sugar (adjust sweetness to your preference), 2 heaped tbsp of thick 18% cream, and 2 tbsp of thick natural yogurt (e.g., Greek type). Mix: Mix all ingredients thoroughly until you get a smooth and thick sauce. Serving: Serve the ready, fluffy dumplings generously drizzled with fresh strawberry sauce.
