Easy Tamales Without Corn Husks

Hello, welcome to: Flavors of Spain; In the Southwest. On this occasion I want to show you how to make the easiest tamales in the universe! This is what you need: For the batter: 2 ½ cup Masa harina (corn flour for tortillas) ¾ cup Shortening ½ Tsp. Baking powder 3 cup Stock Salt (how much depends on your stock) For the filling: 1 ¼ cup Roasted red bell pepper finely diced 1 ¼ cup Roasted poblano pepper finely diced 1 ea. Large egg Salt and pepper to taste Mix masa harina, baking powder and salt in a bowl Add Shortening and “cut” into dry ingredients with your hands until well incorporated Add stock a little bit at a time and mix with a whisk Keep mixing and adding stock until you get a pancake batter consistency Pour batter into a pastry bag, seal top and set aside Mix diced red bell pepper and poblano pepper Beat egg and pour over peppers Add salt, pepper and mix Pipe enough batter to cover the bottom of a 3” diameter ramekin Spoon some of the filling into the center of the ramekin Pipe batter around the filling until you reach 1/2 “ below the top Repeat with the rest of the ramekins Bake tamales in a water bath at 250° F for 45 minutes When cool enough to handle unmold tamales onto plates Use a small paring knife to detach sides from ramekin Serve and enjoy!
