Prepare the Duck Wash the duck with lemon or lime juice, then pat dry thoroughly with paper towels. Using a sharp knife, lightly score the skin on the breast in a crisscross pattern. This allows the green seasoning mixture to soak deeper into the meat while helping the duck fat render during roasting. ⸻ 2. Make the Green Seasoning Paste Add the onion, garlic, scallion, bell pepper, parsley, cilantro, culantro, thyme, rosemary, ginger, pimento, scotch bonnet pepper, olive oil, soy sauce, and water to a blender. Pulse lightly until slightly blended. The mixture should still have texture and not become completely smooth. Transfer the green seasoning mixture to a bowl and mix in all the powdered seasonings along with the Walkerswood jerk seasoning to form a rich seasoning paste. Rub the seasoning paste generously all over the duck, making sure to massage it into the scored breast skin and inside the cavity for maximum flavor. Cover and marinate for at least 4 hours or overnight for the best flavor. ⸻ 3. Roast the Duck Preheat oven to 375°F. Place the duck breast-side down in a roasting pan. Roasting breast-side down first helps keep the breast meat juicy while allowing the flavors to slowly penetrate the duck as the fat renders. Cover loosely with foil and roast for about 1 hour and 15 minutes. Carefully flip the duck breast-side up and continue roasting uncovered for another 45 minutes to 1 hour, or until the skin becomes golden brown and crisp. ⸻ 4. Glaze for the Finish In a small bowl, combine the teriyaki sauce and honey. During the final 10–15 minutes of baking, brush the glaze generously over the duck.
