Cooking Secrets of FIVE-STAR Fijian Resort, Outrigger Fiji Beach Resort! Behind the scenes at FIVE STAR Fijian Resort, Outrigger Fiji Beach Resort. SHAILESH’S LAMB CURRY INGREDIENTS 2 Onions, sliced 20 cloves Garlic, minced 2 kg Lamb Chops, bone in and cut to 3 cm slices ¼ cup Oil 1 tsp Mrs Rogers Black Mustard Seeds 1 tsp Mrs Rogers Cumin Seeds ½ tsp Mrs Rogers Fenugreek Seeds 1 tsp Mrs Roger Chilli Flakes (to taste) 3 Mrs Rogers Cloves 1 Mrs Rogers Cinnamon Sticks, broken in half 1 tsp Mrs Rogers Black Peppercorns 1 4 cm piece fresh Ginger, peeled and minced 2 tsp Mrs Rogers Paprika 2 tsp Mrs Rogers Turmeric 1 tsp Mrs Rogers Curry Powder 1 tsp Mrs Rogers Garam Masala 3 tsp Mrs Rogers Sea Salt Premium Fine 1 diced Tomato Fresh coriander to serve METHOD Step 1 Heat the oil on a large pot over a medium heat. Add the mustard seeds, cumin seeds, fenugreek seeds, cloves, cinnamon sticks, and peppercorns and stir for 1 minute to let the flavours release. Step 2 Add the onions and stir. Cook the onions until they start to caramelise. Add the garlic and cook until it starts to brown. Add the lamb and stir to combine. Cover and continue to cook for 10 minutes stirring occasionally. Step 3 Add the ginger, paprika, turmeric, curry powder, garam masala and salt and stir to combine. Cook for a further 10 minutes stirring occasionally and scrapping the spices off the bottom of the pot. Add the tomato and stir. Cook for a further 10 minutes until the tomato combines all the spices together and the lamb is cooked. Chop the fresh coriander and stir in just before serving. _____________________________ SPICED PUMPKIN INGREDIENTS 1 kg Pumpkin (sweet variety), diced 1 Onion, quartered and sliced 1 tsp Mrs Rogers Black Mustard Seeds 1 tsp Mrs Rogers Cumin Seeds 1 tsp Mrs Rogers Fenugreek Seeds 1 tsp Mrs Roger Chilli Flakes (to taste) 10 cloves Garlic, sliced 1 sprig Fresh Curry Leaves 1 Tbsp Oil 4 tsp Mrs Rogers Sea Salt Premium Fine 10 fresh Mint Leaves 1 Tbsp Lime Juice METHOD Step 1 Heat the oil in a fry pan over a medium heat. Add the mustard seeds, cumin seeds, fenugreek seeds and chilli flakes and sauté for 1 minute. Add the onion and cook until the onion is starting to caramelise and become translucent. Step 2 Add the garlic and cook until it starts to brown. Add the pumpkin, curry leaves and salt and stir to combine. Cook covered until the pumpkin turns into a mash, stirring occasionally. Step 3 Once the pumpkin is cooked, finely slice the mint leaves and add along with the lime juice. _____________________________ POOR MAN’S RICE INGREDIENTS 2 Tbsp Ghee or Butter 1 tsp Mrs Rogers Black Mustard Seeds 1 tsp Mrs Rogers Cumin Seeds 1 Onion, halved and sliced 12 fresh Curry Leaves 3 cups Cooked White Rice 2 tsp Mrs Rogers Sea Salt Premium Fine METHOD Step 1 Heat the ghee in a fry pan. Add the spices and cook for 1 minute. Add the onion and cook until its caramelised and gone transparent. Add the curry leaves and stir to combine. Step 2 Add the rice and stir to combine. Add the salt. Cook for a further 10 minutes until the flavours have combined and the rice is hot. _____________________________ Thanks for watching our video!
