Today I'm sharing one of my favorite dishes when I want something quick, healthy, and absolutely delicious: Baked potatoes and colorful grilled vegetables from the air fryer. 🥔🌈 I try to eat vegetarian a few days a week—simply because it's tasty and healthy. And this dish is the perfect example: minimal effort, packed with nutrients, and amazing flavor. If you'd like more easy, healthy air fryer recipes, just let me know. 💛 🥔 Baked Potatoes with Grilled Vegetables & Herbed Quark (Air Fryer) Ingredients (serves 2): 4 large potatoes 1 zucchini 2-3 bell peppers 2-3 red onions 1-2 tbsp olive oil Salt, pepper, paprika, garlic, fresh herbs 250 g low-fat quark, 1 tub sour cream Herbs (fresh or frozen) Salt, pepper, garlic, sweet paprika Preparation (Cosori Turbo Tower): 1️⃣ Baked Potatoes Wash potatoes well. Prick several times and lightly oil, then season with coarse sea salt. Air fryer: Roast – 190°C – approx. 30 minutes (depending on size). 2️⃣ Grilled Vegetables Cut zucchini, bell peppers, and onions into pieces. Mix with oil and spices. Air fryer: Roast – 180°C – approx. 15 minutes. It depends on how firm you like it. 3️⃣ Herb Quark Mix quark with sour cream. Add herbs.
