In this video, I'll show you how to make healthy Thin Mint cookies at home using clean, simple ingredients like almond flour, pure maple syrup, coconut oil, dark chocolate, peppermint extract, and kosher salt. Traditional Thin Mint cookies may taste good, but they’re made with enriched flour, preservatives, seed oils, and ultra-processed ingredients that aren’t ideal for your gut health. Plus, at around 40 calories per cookie, they can add up fast without delivering much nutritional value. This homemade version is: ✔ Gluten-free ✔ Made with clean ingredients ✔ Better for gut health ✔ Lower in processed sugars ✔ Still rich, chocolatey, and delicious And the best part? You don’t have to wait for Girl Scout cookie season—you can make these anytime. Here's the recipe: Cookies 1 1/2 cups almonds flour 1/4 cup cocoa powder 1/8 tsp salt 1/4 cup maple syrup 2 tbsp coconut oil, melted 1/2 tsp mint or peppermint extract Chocolate Coating 1 cup chocolate chips 2 tsp coconut oil 1/4 tsp mint extract Directions 1. Make the cookies: Whisk together the almond flour, cocoa powder and salt. Mix in the syrup, coconut oil and mint extract until combined and a rough dough forms. Shape the dough into a disc, roll out the dough between two pieces of parchment paper to 1/4 inch thick. Keep covered and chill in the fridge for at least 1 hour to overnight. 2. Cut out circles or any cookie shape you'd like. Bake on 350F for 9-11 minutes until firm. Do not over bake as they burn easily. Let cool completely. 3. Melt the chocolate and coconut oil in a sauce pan on low heat. Stir in the mint extract. Drop the cookies in the chocolate covering both sides, shake off excess and place back on a baking sheet or drying rack lined with parchment paper. Top with sea salt if desired. Refrigerate until the chocolate hardens and enjoy!
