Pithivier - 2 ways - Sweet & Savory | Go Delicious

We all love puff pastry in sweet versions or savory ones, but this one is my favorite. Today I made a delicious pithiviers for you in two ways, one sweet for those of us who love all things sweet, and a savory one, for those of us who like to call delicacies like these a meal. The recipes call for a handful of ingredients, they are easy to follow, nothing complicated, yet incredibly beautiful and delicious at the same time. I hope you give these a try and tell me what you think of them. I used homemade puff pastry, because it's always the best, but store-bought works just as well. For the sweet pithivier I only used a cup of raspberries and a cup of cream cheese. Make sure you cook the raspberries for a few minutes just to get some of the moisture out of them (especially if you use frozen - like I did), then mix with the cream cheese and you have you delicious filling. For the savory version I used one leek, couple of mushrooms, clove of garlic and about 30g. of any melting cheese. Chopped them all and cook them for a while, just so they get nice color and the lovely nutty flavor. To make the pithiviers, roll the puff pastry and cut circles from it. Honestly the size doesn't matter, mine were about 15 cm, 6 in wide. Place the filling on top of the first circle, but make sure there is enough room on the edges to seal the pithivier nicely, about 1-2cm/up to 1in. Brush the edge with egg white, then cover with the top, make a whole at the middle so that the steam can escape, score the top with a knife, brush with egg yolk and bake in a preheated oven on 200C/400F for about 30 minutes or until golden and beautiful.
