These stuffed onion rings are a little different because they are full of matured cheese. They are double coated for frying which will give you a contrasting texture with a golden crispy outer layer and a melted cheesy inner layer. They don’t rely on the dipping sauce for all their flavour because of the way they are made. Finally my secret to an even more crunchier cheesy onion rings is to cool them down first and then freeze them for a short time. This creates an Earthquake level crunch. (The beef extract may be salty) ¼ teaspoon of pepper, 1 tablespoon of freshly chopped thyme, Dipping sauce. ¼ cup of ketchup / tomato sauce. Or ¼ cup of mayonnaise, Or any of your favourite sauces. THE COOKING METHOD: Step 1. Peel and slice the onions in 1.27cm / ½ inch thick slices. Step 2. Place the freshly chopped onion in icy cold water and cover them with ice cubes for 20 minutes. Step 3. Pair similar sized onion rings matching one larger ring with another that is slightly smaller leaving about ½ inch gap. Step 4. Slice the two cheeses into long pieces that will fit snugly between the two onion rings. Step 5. Tuck pieces of the two cheeses into the gap between the onion rings. Step 6. Mix all the batter ingredients in a large bowl and whisk until the mixture is smooth. Step 7. Set up the crumbing section and start with a light dusting of plain flour of the prepared onion rings. Step 8. Dip the flour dusted onion rings into the batter and coat well. Step 9. Next coat the onion rings in the batter, ensuring they are thoroughly covered. Then lightly coat them again in the batter. Step10. This step is important. Place the coated onion rings on parchment paper single row and place in the freezer for 15-20 minutes. Step 11. Just prior to frying coat the onion rings in normal dry breadcrumbs. Step 12. In a frying pan with canola oil bring the temperature high and place the onion rings 2 at a time ( depends on the size of your frying pan) to fry until golden brown. Set on a paper towel and rest. Step 12. Serve with the dipping sauce.
