How to Clean and Store Lettuce

I grow so much lettuce and other tender greens in my garden, but there are times when I'm inundated with the harvest. I love the various type of available lettuce and grow both heads of lettuce and rows of smaller, leafed varieties. Having such a bounty means that I can't use it all at once. This keeps the lettuce crisper. Here's the process: Once picked, immediately bring it indoors. If the lettuce has wilted or feels a bit limp, plunge it in ice water for a few minutes to revive it. Open up the heads of lettuce and rinse each leaf. Remove any dirt, insects, and debris. Lay the leaves on a towel and let dry slightly. If the pieces are small enough, you can also use a salad spinner to dry them. Once only a few droplets of water remain, line a large airtight container with a damp paper towel. Layer in the lettuce, but do not smash it. You can also use a large plastic bag. Place the lid on top and store it in the refrigerator.
