Cramaillote (also called miel de pissenlit or dandelion honey) comes from Eastern France, where homesteaders have been making it for centuries. It tastes like honey- silky, herbal, slightly chamomile. And it's made entirely from a flower most people in America walk past and call a weed. This is foraging at its most rewarding. Some call it dandelion honey. Some cally it miel de pissenlit. Some call it vegan honey. The french region of Franche-Comte calls in cramaillotte- from the regional dialect word dandelion, which itself refers to anything saw-toothed or rigid. Like a dandelion leaf. The recipe has barely changed in three centuries. Because some things in cooking don't need to evolve. They need to be respected, preserved, and passed on. Foraging Safety!!!! Only forage dandelions form land you know has not been treated with pesticides or herbicides. NEver forage from roadsides, public parks, or any property where the spray history is unknown. Follow the rule of one third- never take more than a third from any patch. The pollinators need them too!!!!
