The French Jelly Most People Don't Know You Can Make From Dandelions

How to make dandelion jelly the French way- cramaillote, the foraged preserve that tastes like honey. I'm Chef Jonathan Boyd- Executive Chef, Hell's Kitchen Alumni, and homesteader in Mississippi. In this video I'm taking you into the dandelion fields on our homestead, showing you how to forage flowers and walking you through a french preserve recipe that goes back over three hundred years. Cramaillote (also called miel de pissenlit or dandelion honey) comes from Eastern France, where homesteaders have been making it for centuries. It tastes like honey- silky, herbal, slightly chamomile. And it's made entirely from a flower most people in America walk past and call a weed. This is foraging at its most rewarding. And this is the kind of cooking Deep South Foodies is built on. Items You Will Need: Fruit Pectin: https://amzn.to/4ed3vzq Half Pint Mason Jar: https://amzn.to/430hxy7 Full Pint Mason Jar: https://amzn.to/4uGSSuI White Sugar: https://amzn.to/4wWYand Full Canning Kit: https://amzn.to/4fQ6rmI The Chef's Note: Cramaillotte goes by many names. Some call it dandelion honey. Some cally it miel de pissenlit. Some call it vegan honey. The french region of Franche-Comte calls in cramaillotte- from the regional dialect word dandelion, which itself refers to anything saw-toothed or rigid. Like a dandelion leaf. The recipe has barely changed in three centuries. Because some things in cooking don't need to evolve. They need to be respected, preserved, and passed on. Foraging Safety!!!! Only forage dandelions form land you know has not been treated with pesticides or herbicides. NEver forage from roadsides, public parks, or any property where the spray history is unknown. Follow the rule of one third- never take more than a third from any patch. The pollinators need them too!!!!
