Let's try a slightly more sophisticated dish: Socarrat with orange caviar and saffron mayonnaise. But I assure you, it's not complicated. It just requires a little more time and preparation. You'll look like professional chefs 👩🍳 and it's spectacular! 🙌 Preparation and ingredients: For the orange caviar: 125g orange juice 1.2g agar-agar Mix the ingredients while cold. Once mixed, bring to a boil. Once it has cooled slightly, make the caviar in cold oil using a syringe. For the socarrat: -1 clove of garlic, chopped -½ onion, chopped -200g rice -500g stock -White wine -Dried ñora pepper -1 can of pickled mussels -Saffron Fish stock Sauté the garlic, onion, and ñora pepper. Add the white wine and saffron, then the stock. Once it comes to a boil, add the rice. Cook over medium heat, stirring. Cook for 11 minutes. Then remove the rice and let it cool. Now: -85g of the rice from before -100g stock with crushed mussels -2 tablespoons evaporated milk Heat oil in a pan and add the remaining ingredients. Cook over high heat for 1 minute, stirring, then without stirring, and then over low heat for another 6 minutes.
