Hello everyone! Or rather, good evening, given the time I'm posting this video^^ Are you ready for the best vegan strawberry cake recipe, or not?! Because let me tell you, this dessert is a little gem that will definitely impress you... No eggs, no milk, no animal products whatsoever, as usual, but still so delicious, so decadent. Neither you nor your guests will be able to tell the difference, I'm betting! I hope to get your feedback in the comments section, because this recipe is explained step by step, which means that even if you don't have the right equipment—no electric whisk, pastry ring, or piping bag—you can still make it... I promise! :) For the ingredient list: *For the mousseline cream 300 ml vanilla soy milk (I used the Intermarché store brand at €1.05 a bottle, it's very good) (you can also use almond milk) 300 ml plant-based cream (same: soy or almond, but not rice cream!) 1 vanilla bean 100 g unrefined light brown sugar 45 g cornstarch 1 sachet of agar-agar (4 g) (found in the baking powder section) 190 g softened vegan butter (I recommend Fruit d'Or). (Vegan) *For the sponge cake 120g all-purpose flour (T55) 60g almond flour 75g unrefined light brown sugar half a packet of baking powder (7g) a pinch of salt 240ml vanilla or almond soy milk 2 tablespoons cider vinegar 40ml sunflower or rapeseed oil 1 teaspoon vanilla extract *For the syrup used to soak the cake (you can reduce the quantities as I made a bit too much) 60ml water 60ml sugar here I use a teaspoon of lavender syrup, but traditionally kirsch is used. You can also opt for red fruit syrup... You will also need about 750g of fresh strawberries (preferably French strawberries, naturally sweet and delicious). For the decoration, since the strawberry cake was made for a little girl's birthday, I went with marzipan and fondant. But if it's for a dessert for adults, I suggest you very thinly spread cream on top with a spatula, then add slivered almonds, chocolate shavings, or pistachio pieces... You can also make a "mirror" glaze with 300g of strawberry jam, which you warm in the microwave and pass through a sieve to remove any lumps.
