[Unorthodox Kombucha Peperoncino] 100g 1/5mm pasta 3 cloves (15g) garlic 2 chili peppers 3g Italian parsley Salt (0.8% salt concentration) 2 tablespoons olive oil 1 teaspoon kombucha 2 ladles of cooking water ⭐︎ Olive oil for finishing ★ Parmigiano-Reggiano to add flavor Bring a generous amount of water to a boil. Add salt (0.8% salt concentration) 3 cloves garlic, minced. Cut 2 chili peppers in half lengthwise and remove the seeds. 3g Italian parsley, coarsely chopped. Make garlic oil by combining the garlic and 2 tablespoons olive oil. Put the garlic oil in a frying pan and heat over high heat. Once it starts to fizz, turn off the heat, add the bird's eye chili, and simmer over low heat. Add 2 ladles of cooking water, 1 teaspoon of kelp tea, and firm-boiled pasta and mix over low-medium heat.
