Today in our village, the six of us came together to cook a massive mountain of EGG BEJO! This is a legendary Burmese street food recipe that transforms simple boiled eggs into an explosion of flavors. First, we boiled the eggs and peeled them. Then, we stuffed them with a crispy mix of shallow-fried garlic, golden-brown fried onions, and spicy red chili flakes. To bring it all together, we drizzled a special tangy tamarind and lemon juice dressing inside each egg before garnishing with fresh coriander leaves. It is incredibly crispy, sour, spicy, and satisfying to eat! After cooking this grand feast, we took the fresh meals to serve the lovely elders at the local old age home.
