Perfect Ashure Recipe; Ingredients 2 cups of wheat for ashure 2 cups of cooked dried beans (1 cup whole) 2 cups of cooked chickpeas (1 cup whole) 2 tablespoons of rice 150 g raisins 150 g dried apricots 150 g dried figs 2 tablespoons of currants 2 tablespoons of pine nuts 1 cup of hazelnuts 2 grated oranges 1 apple Cloves 3 cinnamon sticks 3 cups of granulated sugar 5 liters of hot water For topping; Crushed hazelnuts Crushed pistachios Dried apricots Dried figs Coconut Preparation First, soak 2 cups of wheat in water overnight, drain the water, and put it in a large pot with 2 liters of hot water. Let the wheat cook. I washed the wheat the night before, boiled it twice for a short time each time, then drained the water. On the third time, I boiled it for 10 minutes, covered it, and let it sit like that until morning. I soaked the chickpeas and dried beans in the same way the night before and boiled them until they were slightly al dente before using them. I washed the raisins thoroughly by soaking them in hot water for 10 minutes. I washed the dried apricots and dried figs one by one in plenty of water, dried them thoroughly, and then chopped them into small cubes. I also washed the currants by soaking them in hot water for about 10 minutes. I washed the rice with plenty of water and drained it. I tied the cinnamon sticks I will use to a string so that it will be easy to take them out. Similarly, to make it easier to pick them out one by one, you can use the cloves by sticking them into the apple, as I did. After the wheat has cooked for about 50 minutes, add the boiled chickpeas and dried beans, then 2 tablespoons of rice and mix. Add a little more hot water to the pot and add the apple with cloves and cinnamon sticks. Let it boil like this. After boiling for about 15 minutes, add 150 grams of dried apricots, 150 grams of raisins, 150 grams of dried figs, and 2 tablespoons of currants to the aşure. Stir the aşure occasionally to prevent it from sticking to the bottom. The water will decrease as the aşure boils. It shouldn't be too watery, but it should be a consistency that can be easily stirred. Therefore, you can add hot water as needed. After the fruits have cooked for 10 minutes, remove the cinnamon sticks and the apple with cloves from the aşure. Next, add 3 cups of powdered sugar, the grated zest of 2 oranges, 2 tablespoons of pine nuts, and 1 cup of hazelnuts, and mix all the ingredients well. I used a total of 5 liters of hot water in this recipe. You can adjust the amount of water according to the consistency of your aşure. Finally, cook the aşure over low heat for another 10 minutes.
