Today I'm sharing my sandy vegetables cooked in the air fryer. I wanted to share this recipe for the air fryer because I've noticed that many people buy this appliance without knowing how to get the most out of it. Sandy vegetables are a fridge-emptying recipe, so they're ideal for when you have some vegetables left in the fridge and don't know how to get rid of them. It's a simple dish to make and also very tasty, perfect as a side dish for meat dishes. To prepare my sandy vegetables, I used these ingredients: 2 red peppers 1 black eggplant 2 potatoes 1 Genoese zucchini Spring onions Breadcrumbs to taste 50g Parmesan cheese Extra virgin olive oil to taste Salt and pepper to taste Try this recipe if you have an air fryer, and if you don't, you can still make it by baking the vegetables or even pan-frying them.
