The food of our Nonna, made with homegrown tomatoes, garden herbs, and simple ingredients, is being replaced by something shinier, faster, and more marketable. Italian cuisine is still famous and widely celebrated, but its spirit seems to be fading. So what happened, and who is keeping Italian tradition alive while the world moves on?
