On the other hand, Seswaa is Botswana’s national dish that was primarily served at weddings, funerals, and independence celebrations. The dish, however, is now available in different streets and restaurants within Botswana. In this documentary, we team up with Mhlelusizo Ncube a passionate chef who is on a mission of changing and inspiring the African Food story to cook these two dishes. As YALI alumni, Director of Stir-Up African Chefs and being a member of the Domestic Association of Zimbabwe, Che Mhle believes that food is an essential part of one’s identity and is inseparable from culture. Cooking uJeqe Ingredients: » 4 cups of cake flour » 1 tablespoon of sugar » 1 teaspoon of salt » 10g of yeast » 2 ½ cups of warm water How to do it: » In a bowl add the flour, sugar, salt and yeast. » Gradually add the warm water until a soft dough forms » Onto a surface with flour, knead the dough until its smooth and elastic » Place into a bowl and leave to prove for 30 mins. » Tip onto a floured surface and knead to remove the air from the dough » Place into a heat proof dish and leave to rise until its double the size. » Place into a pot filled with boiling water and leave to simmer for 2 hours. 2. Cooking Seswaa Ingredients: » 1kg Beef » Salt » Water » Fresh Basil (Optional) How to do it: » Cut meat into large chunks then brown in a dish suitable for slow cooking in the oven or fire » Add whole peeled onion, salt and water.
