Autentica Salsa de Tomate Marinara Italiana

When you need an authentic Italian tomato sauce for your pizzas, mozzarella sticks, ravioli, spaghetti, etc., etc., etc. This is the one that always comes in handy, the simplest, with authentic tomato flavor, and perhaps the easiest to prepare: Marinara Sauce. This sauce originated in Naples and contains minimal ingredients—tomato, onion, garlic, and spices—for a flavor that's perfect for any Italian dish. Ingredients: • 1 kilo (35 oz) whole peeled tomatoes with their juices from the can • 1/4 cup extra virgin olive oil • 1 medium onion, chopped • 4 garlic cloves, thinly sliced • 2 tablespoons dried oregano • 1 tablespoon dried basil • 1 level teaspoon salt Optional: 1 teaspoon garlic powder • 1/2 level teaspoon black pepper • 1/2 level teaspoon sugar • Salt and black pepper, and sugar to taste Preparation: • Heat the oil in a large skillet or pot over medium heat. • Cook the onion and garlic until lightly softened, then add the oregano and basil and continue cooking until soft and translucent, about 10 to 15 minutes. • Mash the tomatoes with a wooden spoon or a masher. • Add the tomatoes to the pan along with 1 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of sugar, and optionally, 1 teaspoon of garlic powder, stirring to combine. • Simmer covered until thickened, 25 minutes or more. • Check the acidity and add a pinch of sugar if needed, and adjust the salt and pepper.
