Then drain. In a large saucepan, boil 1.5 liters of water. Add the sago and cook over medium heat for about 20 to 25 minutes, stirring frequently to prevent sticking. When most of the pearls are transparent, with only a small white dot remaining in the center, turn off the heat. Drain the tapioca pearls in a sieve and rinse quickly under running water to remove excess starch. Return the tapioca pearls to the pan. Add the wine, sugar, cinnamon, and cloves. Cook over low heat for another 10 to 15 minutes, stirring occasionally. The tapioca pearls should become translucent and the syrup slightly thickened. Remove the cinnamon stick, cloves, and orange peel. Transfer to a serving dish and let cool. Refrigerate for at least 3 hours.
