Pour in water so that it covers the bones. Set on high until it begins to boil, (Usually takes 1-2.5 hours to boil.) Then reduce heat to low and let simmer for 12 to 48 hours. When finished strain and put in wide mouth mason jars for storage. Let cool and take fat off top to cook with later. Heat to serve and add more salt to taste.
