This knowledge encompasses veterinary medicine, nature, construction, and crafts, especially those involving esparto grass, which have been an integral part of the shepherd's profession. This interview is part of the project "Shepherding in the Serranía de Cuenca," carried out by Vestal and funded by the Serranía de Cuenca Local Action Group (GAL), Prodese. The project aims to create a repository of lost trades in the Serranía de Cuenca, focusing on shepherding and traditional livestock farming.
