I really hope you like it ❤️ 🔴 INGREDIENTS: 🔴 PRESTÍGIO FLAVOR: ➡️1 can of condensed milk (395g) ➡️1 can of heavy cream (200g) ➡️200ml of coconut milk ➡️600ml of whole milk ➡️100g of unsweetened shredded coconut ➡️1 tablespoon of neutral binder (15g) ➡️250g of chocolate bar (I used semisweet) 🔴 CHOCOLATE FLAVOR: ➡️1 can of condensed milk (395g) ➡️1 can of heavy cream (200g) ➡️1 cup of 50% cocoa cocoa powder (90g) ➡️800ml whole milk ➡️1 tablespoon neutral binder (15g) 🔴 PASSION FRUIT FLAVOR: ➡️1 can sweetened condensed milk (395g) ➡️1 carton heavy cream (200g) ➡️3 passion fruit bars ➡️1 cup powdered milk (100g) ➡️600ml whole milk ➡️1 tablespoon neutral binder (15g) ➡️250g chocolate bar (I used semisweet) 🔴 SIZE OF THE BAGS I USED: ➡️24x6cm (I used 150ml of each flavor in each bag) 🔴 In each bag I added 20g of melted chocolate. 🔴 SHELF LIFE: 🔴 Prestige: ✅ In the freezer (−18°C or less): Average shelf life: 60 days, can reach up to 75 days if: The freezer maintains a constant temperature; If the bags are well sealed, if you don't use fresh coconut; If the chocolate used is fractionated or hydrogenated coating (which resists freezing better). 🔴 Chocolate: ✅ In the freezer (−18°C or less): Average shelf life: 90 days (3 months) Always keep tightly sealed and frozen continuously. 🔴 Passion Fruit with Chocolate: ✅ In the freezer (-18°C or lower): Average shelf life: 60 to 75 days Reason: Passion fruit is acidic and helps preserve it, but the chocolate shell may lose texture or turn "white" (due to the fat) if frozen for too long. ➡️Remember that if you thaw the popsicle and then freeze it again, there's a 99% chance it will crystallize, even if it's super creamy when prepared. 🔴YIELD: ➡️Prestige: Yields 10 units ➡️Chocolate: Yields 11 units ➡️Passion Fruit with Chocolate: Yields 11 units 🔴SUGGESTED SALE PRICES: ➡️Ice creams with a chocolate shell sell for up to R$10.00 per unit ➡️Gourmet ice creams without the cone sell for up to R$8.00 per unit ➡️Remember that these prices are based on my region; it's very important to calculate accordingly. ❤️I really hope you enjoyed it.
