Strawberry Pretzel Salad - Sunday Subscriber Series #110 - A Salty and Sweet Dessert!

Strawberry Pretzel Salad 2 cups crushed pretzels 1 1/4 cup sugar, divided 1 1/2 sticks (3/4 cup) butter, melted 8 ounces cream cheese, softened 8 ounce tub Cool Whip 1 package (6 ounces) strawberry Jello 1 can (20 ounces) crushed pineapple, drained but save the juice 20 ounce box frozen strawberries, thawed and save the juice Preheat oven to 350°. Crush pretzels. Stir together the pretzels, 1/4 cup of the sugar, and the melted butter.  Press this into a 9”x 13” prepared baking dish. Bake for 10 minutes. Allow the crust to cool completely.  Blend together the cream cheese and the remaining one cup of sugar. Once this is well combined, fold in the Cool Whip. Spread this mixture over the cooled crust. Refrigerate. Drain the crushed pineapple and the frozen strawberries and save the juice. If combined you do not have 2 cups of liquid, add water to make 2 cups. Dissolve the gelatin with the pineapple and strawberry juice  and heat until the gelatin is totally dissolved. Put this in the refrigerator until the gelatin has cooled and is syrupy. Then add the crushed pineapple and the frozen strawberries. Spread this over top of the cream cheese layer. Chill well.
